I would love to have a year-round garden, with something always on hand to pick. I am slowly working towards that goal, and in fact I did have thyme all through the winter; but my first  real "harvest" is still in April.

Not that I'm complaining... April is great! I haven't even planted all of my seeds yet, so it is really satisfying to already be harvesting my lunch from the garden, which is what we did today.



My vertical garden is yielding radishes a few weeks ahead of schedule, all because I was able to start the boxes in the greenhouse.
Not bad for April!

The spinach planted in the greenhouse for the winter garden is now huge!
I only needed to pick six leaves to make a salad for two people. We are going to have to eat a lot of spinach in the coming weeks, because the cucumber plants need this location!

So radishes, spinach.... and of course some chives!

I made a lovely herring salad (I know how it sounds, but if you live in Sweden long enough you'll start to appreciate just how lovely herring salad can actually be) with the chives, and served it on a bed of spinach with egg and radishes.
Yum!

The herring salad also contained red onion and dill, which are planted in the garden, but not ready yet. In a couple of months, I won't have to buy any veg from the store for this dish!

On another note... My asparagus are growing! I can't harvest them this year, but next April I will be having these in a salad.


I can't believe I'm so excited about something that won't be on my plate for another year.
